Shan Yao has a distinct brown, bark-like exterior. The flesh can be white, yellow, purple, or pink depending on the maturity of the yam. These tubers are highly nutritious, versatile, and may benefit your health in many ways. Shan Yao is used in Chinese herbal medicine, traditionally to treat disorders related to the stomach, spleen, lungs, and kidneys. While the tuber and bulbs of Chinese yam are edible, generally only the tuber is consumed as food. Chinese Yam is referred to as shanyao (山药) in Chinese and the tuber is consumed raw, steamed or deep-fried. It is added to savory soups or can be sweetened with a berry sauce.
