Functional beverages — ready-to-drink shots, sachet drink powders, herbal teas and infused waters — are one of the fastest-growing homes for botanical extracts. But a beverage is an unforgiving format: an extract has to dissolve cleanly, survive processing, hold its colour and flavour, and stay compliant. This guide walks through what to check when you formulate a botanical extract into a drink, from solubility and dosing to heat, pH, colour stability and clean-label positioning.

Start with solubility

The first question for any beverage ingredient is whether it dissolves in your system. Most spray-dried botanical extract powders are water-soluble, which makes them well suited to clear and cloudy drinks alike. In a ready-to-drink product they need to disperse without leaving sediment; in a sachet or stick-pack they need to reconstitute quickly in cold or warm water. Always confirm solubility on a real sample in your own liquid base — a datasheet that says “soluble” still needs to be verified at your target dosage and temperature.

Oil-based actives are the exception. Ingredients such as oil-soluble vitamins or botanical oils will not dissolve in water on their own; they need to be delivered as an emulsified oil powder. Get the dosing right for the format

Dosage that works in a capsule does not automatically translate to a drink. In a beverage you have to fit the active into a volume the consumer will actually drink, at a taste the product can carry. Work backwards from the serving: decide the per-serving dose, then check that amount dissolves and does not overwhelm the flavour. Extract powders are typically dosed from a couple of hundred milligrams up to a gram or more per serving depending on the ingredient, so a concentrated, standardized extract is often easier to formulate with than a low-strength material because you need less of it.

Mind the pH and acidity

Most functional beverages sit on the acidic side, especially fruit-flavoured and vitamin-C-containing drinks. Acidity affects both stability and taste. Some botanical pigments and actives are pH-sensitive: colour and even solubility can shift as the drink becomes more or less acidic. Butterfly pea, for example, is famous for changing from blue to purple to pink as pH drops. Know your extract’s behaviour across your target pH before you lock the recipe, and test the finished drink rather than the extract in plain water.

Colour and pigment stability

Natural-colour extracts are a major reason to use botanicals in beverages, but plant pigments are more delicate than synthetic dyes. Betalains (the red-magenta pigments in red dragon fruit and beetroot) and anthocyanins (in roselle, purple yam and berries) are sensitive to heat, light and pH. To protect colour: minimise high-heat hold times, consider light-barrier packaging, keep the pH in the pigment’s stable range, and validate shelf-life colour on the finished product. If a vivid, stable natural shade is the goal, choose the pigment chemistry that matches your process rather than forcing one that fades.

Survive the heat step

Most beverages are pasteurised, hot-filled or retort-processed for safety and shelf life, and heat is where delicate actives and pigments are most at risk. Ask two questions early: does my active tolerate the time-temperature profile of my process, and can I add it after the main heat step (for example, as part of a dry sachet the consumer reconstitutes) to protect it? Powder or liquid concentrate?

Many botanicals are available as both a spray-dried powder and a liquid concentrate, and the right choice depends on your process. Powders are stable, easy to ship and store, and ideal for dry sachet and stick-pack products and for dosing into dry blends. Liquid concentrates integrate smoothly into ready-to-drink lines and syrups where you are already handling liquids. For a heritage flavour like pandan, for instance, the powder suits instant mixes while the liquid concentrate suits syrups and RTD beverages. Match the physical form to where the ingredient enters your process.

Flavour, mouthfeel and sedimentation

Botanical extracts bring their own taste — sometimes bitter, sour or earthy — that has to be balanced with sweetness, acidity and complementary flavours. Standardized, well-made extracts are more consistent batch to batch, which makes flavour balancing repeatable. Watch for sedimentation and clouding over shelf life, particularly in still, clear drinks: even a soluble powder can settle if the system is not stabilised. Test the finished beverage through its full shelf life, not just at day one.

Keep it compliant and clean-label

Beverages are consumed in large volumes, so compliance matters. Scale-up: what changes between the bench and the plant

A beverage that works perfectly in a one-litre bench trial can fail on the line, and the reasons are consistent enough to be worth planning for before you book plant time.

Mixing energy falls. A bench trial is high-shear relative to its volume; a production tank is not. An extract that dispersed instantly in a beaker can raft on the surface or form lumps in a tank, so pre-dispersion in a small volume of the same liquid, or dry-blending with another dry ingredient before addition, becomes necessary at scale.

Thermal history lengthens. On the bench the product is heated and cooled quickly. In a plant it sits hot in a balance tank, passes through a heat exchanger and holds warm in a filler queue. Total time above temperature can be several times longer, and that is what degrades heat-sensitive constituents and shifts natural colour — not the peak temperature alone. Ask for the full time-temperature profile, not just the pasteurisation set point.

Water changes. Bench work often uses deionised water while the plant runs on treated municipal supply, with calcium, magnesium and a different alkalinity. Those ions are a common cause of haze and sediment that appeared at scale but never at the bench. Trial in the actual process water.

Oxygen exposure rises. Pumping, filling and headspace all introduce oxygen that a small beaker trial never sees, which matters for oxidation-prone constituents and for colour. Deaeration and headspace nitrogen are worth specifying early rather than retrofitting after a shelf-life failure.

The cheapest insurance is a pilot run at a tenth of production scale, in the real process water, with the real thermal profile, followed by a proper accelerated stability study on the packed product. It costs a day. Discovering the problem on a full production batch costs the batch.
