Belonging to the legume family, pea either yellow or green is found throughout the world, with the world’s top producers being Russia, China, India, Canada and the United States. Pea protein is derived from ground yellow split peas (Pisum sativum) and via a series of mechanical and chemical separation. The mechanical process split the dry seeds involves husking, or dehulling, the seeds. This removal of the outer coating of the seed allows for easy division of the pea into its two cotyledons. The split pea seed is milled into flour and then the protein is extracted via separation, hydrolysis and drying to yield concentrated and purified protein in order to preserve its functional properties.
